Low Carb Stuffed Jalapenos

A delicious stuffed jalapeno low carb snack, hors d’oeuvres or even a meal.

Ingredients

  • 24 Jalapenos medium to large size
  • 2 8 ounce Cream Cheese softened
  • 3/4 cup Bacon Bits
  • 1 cup Cheddar Cheese shredded
  • 1/4 cup Parmesan Cheese shredded
  • 1/4 tsp Garlic Powder
  • 1/8 tsp Onion Powder
  • Salt to taste
  • Pepper to taste
  • Green Onion optional

Instructions

  1. Preheat oven to 450 degrees.

  2. Rinse the jalapenos(and then dry them.  Slice them lengthwise..  Using a spoon, scrape out the seeds and white ribs inside each half.   Discard of the ribs and seeds.

  3. Mix the other ingredients together.  Using a spoon, fill each half with the mixture.

  4. Place on a baking sheet. 

  5. Bake for 25 minutes.

  6. Allow to cool for 5 minutes.  Enjoy!

Recipe Notes

  •  I use gloves and goggles to to this.  You do not want the juice on you as it will burn.  Dispose of seeds and rib immediately.  Set jalapeno halves aside on a baking sheet.
  • This amount will take two baking sheets.
  • I use the Oscar Mayer Select Natural Real Uncured Bacon Bits when I can’t fry up my own.  It just tastes better.  You use the whole 2.8 ounce bag of it in the recipe.
  • You can freeze these before baking.   They take an extra 5 minutes or so in the oven.  I just leave them on the baking sheet and cover with tight fitting wrap, and then when I am ready for them, I remove wrap and bake.  Freeze for up to 3 months.    If they last that long….
  • We usually eat a batch for dinner and freeze the other half for later.
  • Each popper is about  .5 Net Carbs as the serving size is for 2 halves.  
  • I will sometime eat these for a meal of about 8 halves.
