I wasn’t really sure that I liked Birch Benders Paleo for pancakes and waffles. Sure lots of people like it, and it is okay with some extras added. Where it really shines for me is for use as a muffin base. I’ve made a couple different muffins with the Paleo and they’ve all come out yummy. Give it a try!

Lower Carb Blueberry Muffins
A great blueberry muffin recipe that is lower in carbs than your average muffin.
Ingredients
Muffin
- 2 cups Birch Benders Paleo Mix
- 2 tsp Baking Powder
- 3 tbsp Truvia baking blend
- 1/2 cup Milk
- 1 stick Butter melted
- 2 Eggs
- 1 tsp Vanilla
- 1 tbsp Sour Cream
- 1 1/2 cup Blueberries
Instructions

Preheat the oven to 350 degrees.

Lightly grease muffin tins.

Mix Birch Benders mix, baking powder, Truvia and cinnamon together in a large mixing bowl.

Add milk, butter, eggs, vanilla and sour cream to the dry ingredients and mix well.

Spoon into muffin tins.

Bake for 25-30 minutes.

Let cool and enjoy.
Recipe Notes
I've used dried unsweetened blueberries too. Just soak them in warm water and drain before using in the recipe.
