Lower Carb Almond Bread Pudding

Ingredients
- 1 loaf Keto Bread
- 1 quart Half and Half
- 2 tbsp Butter softened
- 3 Eggs
- 2 tbsp Almond Extract
- 3/4 cup Truvia Baking Blend
- 1 cup Almonds, sliced
Instructions

Break up the slices of bread and place in a large bowl. (It's even better if they are a little stale.)

In a large bowl, beat the eggs together. Add Half and Half to the eggs and mix together.

Pour the egg mixture over the bread and mix it in. Cover and let stand in the refrigerator for an hour for the bread to soak up the liquid. The longer, the better. Overnight is best..

Preheat oven at 325 degrees.

Coat a 9×13 baking dish with butter.

Stir extract and Truvia into bread mixture. (You could do this when you do the egg mixture.)

fold in sliced almonds.

Spread mixture into the baking dish.

Bake 50 minutes or until golden brown and firm to the touch.

- So, one serving would be 6 net carbs. (I use an automatic calculator and it should be correct, but always do your own calculations! These things aren’t infallible.)
- If you don’t like almond flavoring, use Vanilla. You can even add other flavorings like coconut extract, etc.
- You can add sugar free chocolate, coconut, other nuts, etc. to the recipe, just be mindful of the carb count changes that creates.
- You can use any number of keto or light breads, just be mindful of the carb count changes that creates.
- We like the almond bread pudding plain, but there are any number of sauces or sugar free syrups or powdered “sugars” that you could put over top of this, if desired.
