Cookbook – Low Carb Essentials

If you have been low carbing it for a while or have done it before, you are probably familiar with George Stella.  He changed my cooking world along with Dana Carpender!  If you are not familiear with him… get on his website or buy his cookbooks.  He also is a chef on the Food Network and some of his recipes are on there!

The cookbook captions that it is “Everyday low-carb recipes you’ll love to cook and eat!”  And it is!

This chef understands low carb cooking!  No pasta or potatoes to be found!  Truly a cookbook for the diabetic AND the metabolic syndrome sufferer.

I’ve tried some recipes and can’t wait to try some of the others including:

  • Zucchini Hash Brown Patties
  • Pumpkin Pecan Pancakes
  • Loaded Low Carb Grits
  • Wisconsin Cheese Soup
  • Grain Free Pizza Crust
  • German Cucumber Salad
  • Shrimp and Grits
  • Spaghetti Squash Carbonara
  • Coconut Pound Cake

And much much more!

I have tried the  Zucchini Hash Browns and Coconut Pound Cake.  Delicious of course!  I can’t wait to make the others!  I forgot to take pictures of them, so forgive me for that.

You will want this cookbook in your kitchen!

Cookbook – Low Carb Cravings

This book has deceptive recipe titles.  Like “Potato Salad” or “French Fries”.  I kept thinking “no way” and then turn to them and see a nice alternative to the real deal under the title.  It was tough having my hopes up that SOMEONE had found a way around the carbohydrate restrictions on potatoes, but the alternatives look really good!

I’ve tried some recipes and can’t wait to try some of the others including:

  • Blueberry Muffins
  • Hash Browns
  • Corn Bread Muffins
  • Potato Salad
  • Barbecue Baked Beans
  • Nachos
  • French Fries
  • Onion Rings
  • Cottage Pie
  • Basic Pizza Crust
  • Chicken Enchilada
  • Vanilla Milk Shake
  • Peanut Butter Cookies
  • Pumpkin Pie
  • Maple Syrup

And much much more!

Their Fried Chicken on the cover looks so delicious.  I’m not a big fried foods person, but I’m thinking about doing that recipe because the picture looks so good!

I have tried the Hash Browns. Delicious of course!  There is so much more to explore in this book.  It isn’t a very old book and so it is up-to-date with the trends and sugar substitutes.  This is also one, where if you are a cook (and I am) you KNOW that with what’s in the recipes that they are going to be good no matter if you have made any of them or not!  That is true with this book!

I’ll update this post with more recipes as I try them.

I do heartily recommend this for your kitchen!

Cookbook – 1001 Low-Carb Recipes

I remember thinking when I discovered this book and its earlier incarnation that had 500 recipes, that I was ecstatic that I found someone who got this journey!  No borderline foods that I couldn’t eat!

I love reading cookbooks. I go through them.  I mark them with sticky notes and sticky arrows.  Eventually I get to most of the ones I mark.  Sometimes I make adjustments for my tastes.  Sometimes it is just good as it is.

I’ve tried some recipes from this cookbook and I can’t wait to try some of the others including:

  • Almond Parmesan Crust
  • Oatmeal Cookies
  • Buttermilk Bran Muffins
  • Dinner Rolls
  • Zucchini Bread
  • New York-Style Cheesecake
  • Italian Walnut Cake
  • Cream of UnPotato Soup
  • Cheater’s Chowder
  • Japanese Fried “Rice”
  • Tuscan Soup
  • Graham Crackers
  • Maria’s Flan

This is one big book!  There are recipes I will probably never get to!

So far, I have tried the Tuscan Soup and the Almond Parmesan Crust.  Delicious of course!  I can’t wait to make the others!  I promise to take pictures!  I promise to write about more of them in updating this post.!

This is like the anchor cookbook everyone should have in their low-carb kitchen!  It is a little daunting starting out cooking and baking low-carb, but Ms. Carpender has been at this for quite some time and leads both those new with low-carb living and those that are used to it down new culinary paths!

Another great cookbook by Chef George Stella!  Another one for your cookbook shelf!

I’ve tried some recipes and can’t wait to try some of the others including:

  • Ultimate Mock Mac and Cheese Casserole
  • Loaded “Faux-tato” Skins
  • Asian Pork Meatballs
  • Low Carb Lasagna
  • Bacon and Cheddar Mock Mashed Potatoes
  • Real Cheddar Cheese Crisps
  • Baked Zucchini Chips
  • Savory Cheddar Minute Muffin
  • Baked Meringue Cookies
  • Almond Shortbread Cookies
  • Stella-Style Cheesecake
  • Coconut Cake
  • French Vanilla Ice Cream

And much much more!

I tend to note recipes that can substitute my much missed foods rather than his also great meat and sides recipes.

I have tried the Low Carb Lasagna (and also cheated and used Mario Battali’s or Rao’s tomato and basil sauces in a pinch) and Coconut Cake.

My husband is a Coconut Cake nut and so my mother-in-law and I surprised him with the cake.  It was delicious!  I can’t wait to convert the recipe to MY favorite cake which is almond.  I’ll let you know how that turns out!

Another great cookbook to add to my collection.  You will want to add this to yours as well!

Cookbook – Quick & Easy Low-Carb Cookbook

This is a great first low-carb cookbook.  I love it because it gets you into the groove of using spaghetti squash, zucchini and cauliflower!

It has a great couple of pages about:

  • Spaghetti Squash
  • Zucchini Noodles
  • Zucchini Ribbons
  • Cauliflower Mash
  • Cauliflower Rice
I definitely got to feeling better about losing pasta after starting to use these alternatives instead of pasta and rice.  One day after eating cauliflower rice for dinner my husband said “I’m not missing rice at all.”  I had to agree. The pain of losing a beloved food was lessening with each new delicious recipe I tried.  But back to the cookbook…

George Stella’s pictures look better in the cookbook, but you can see here that I got my start on them from his cookbook!

  • Skillet Pizza (Mozzarella)
  • Pepper Jack “Corn” Muffins
  • Fried Cod
  • Cauliflower Risotto

I have tried the Skillet Pizza and it works!.  There are also either Almond Flour or Cauliflower based pizza crusts in his other cookbooks and all three versions are good.

A definite cookbook for the collection!
