Lower Carb Sausage Bread Pudding

I had some leftover almond flour “cornbread” that I had made the night before and wondered what I could do with it.  I decided to make a bread pudding using it and thought I would add sausage to make it a breakfast dish, but really you can add any meat and make it for dinner or lunch as well.  You can vary the ingredients to your taste.  You might want more or less salt (depending on the meat especially) or add herbs.  My best friend made a ham version for dinner the very day I made the sausage version for breakfast.  Both were hits with the family, and I had other family asking for the recipe.  So for them, and you all… here it is!

Recipe Notes

  • Be super careful when working with oven heated dishes and skillets.  I forgot and touched the handle of my cast iron skillet once.  Something I won't do again.
  • I usually make the "cornbread" a day ahead and have a slice or two out of it and use the rest for this recipe.
  • You can do this recipe with ham or other meats and it is delicious!

Low Carb Sausage Cheese Balls

A perfect appetizer, but we eat them for breakfast.  We make a lot and put some in the refrigerator and some in the freezer.  They freeze well.  Just pop them in the microwave or toaster oven to reheat!

Low Carb Sausage Cheese Balls

Everyone loves Sausage Cheese Balls for the holidays or special events.  We love these low carb versions also for breakfast!

Course Appetizer
Prep Time 15 minutes
Cook Time 30 minutes
Total Time 45 minutes
Servings 36
Calories 148 kcal

Ingredients

  • 1 pound Sausage mild
  • 1 pound Sausage hot
  • 3 cups Sharp Cheddar cheese shredded
  • 1 cup Parmesan cheese shredded
  • 2 Eggs
  • 1 cup Almond Flour
  • 2 tbsp Dried Onion minced
  • 4 tsp Baking Powder

Instructions

  1. Preheat oven to 350 degrees.

  2. Mix all ingredients in a large mixing bowl.  I like using my hands with food-safe gloves on.

  3. Form 2 inch meatballs and place on baking sheets with sides (the grease from the sausage and cheese will accumulate on the sheet.  The sides need to contain it.)  It should make about 36 large or  you can make 48 smaller meatballs.

  4. Bake for 30 minutes or until browned.

  5. Remove meatballs while warm to a paper towel lined baking sheet to soak up some of the grease from the meatballs.

  6. Serve and enjoy.  Or... refrigerate or freeze for future use.

Recipe Notes

  • Onion is optional, but adds to flavor.
  • I like to use the low sodium, nitrite free sausage or turkey sausage when I can find it.  That will affect the nutritional values.
  • These are the most like those made with Bisquick that I have found.
  • The meatballs will not expand and so you can have tight spacing on your baking sheets.
  • You can put these on a wire rack on the baking sheet to let the grease run through.  I am mixed on this as the meatballs tend to cook around the wires and then are embedded.  I've ruined meatballs pulling them off the racks before.  I had to run spatulas on the back side of the rack to get the meatballs to release.

Low Carb Crustless Quiche Recipe

A delicious Low Carb option to the carb killing crusted Quiche!

Low Carb Crustless Quiche

A delicious breakfast egg dish that can be varied with many different ingredients.

Course Breakfast
Cuisine French
Keyword low carb
Prep Time 10 minutes
Cook Time 40 minutes
Total Time 50 minutes
Servings 8
Calories 158 kcal

Ingredients

Basic Ingredients

  • 1 Tablespoon Butter
  • 1 small Onion chopped
  • 6 Eggs beaten
  • 10 ounces Frozen Spinach thawed, cooked, drained and cooled
  • 1 1/2 cups Cheddar Cheese sharp
  • 1/4 teaspoon Salt
  • 1/8 teaspoon Pepper

Optional Add-ons or Substitutes

  • 12 strips Bacon cooked and crumbled
  • 1/2 cup Ham chopped
  • 1/2 cup Sausage crumbled, cooked and drained
  • 1 cup Mushrooms chopped and sauteed in butter
  • 1/2 cup Tomatoes diced and drained
  • 1 cup Peppers chopped and sauteed in butter
  • 1 cup Broccoli chopped, steamed and drained
  • 1 cup Cauliflower chopped, steamed and drained
  • 1/2 cup Artichoke Hearts drained and chopped
  • 1 cup Yellow Squash chopped, steamed and drained
  • 1 cup Zucchini Squash chopped, steamed and drained
  • Nutmeg light sprinkle

Instructions

  1. In a medium pan over medium heat, saute onions until translucent.

  2. In a bowl, combine onions, eggs, spinach, 1/2 cup of cheese, salt and pepper.  Pour into a 9" pie or quiche dish coated with non-stick spray.

  3. Top mixture in dish with 1 cup of cheese.

  4. Bake in a preheated 350 degree oven for 35-40 minutes.

  5. Allow to cool 10 minutes and serve.

Recipe Notes

  • The add-ons or substitutions are rather endless.
  • Use fresh spinach!  About a large bag (at least 9 ounces), steamed down, drained and cooled.  I prefer baby spinach for its tenderness.  (I tend to get the huge box containers of spinach for salads.  When I have leftovers  in the box or its just gotten to the edge of where I'll eat in a salad... I use it in sautes or quiches.)
  • Change up the cheeses!  Use Swiss, Gouda, Muenster, Gruyere... etc.!  You can even add soft herb cheeses.  I've not ventured into goat cheeses yet, but if I do, I'll let you know.
  • Add herbs.  I love to add chives.  I've done a smoked salmon quiche before and added dill.  Basil might add a new twist to some quiches.  Be creative!
