Lower Carb Snickerdoodles

I was so excited when I made almond cookies that satisfied my tastebuds.  I had been missing those in my low carb lifestyle!  Then, my husband mentioned his favorite cookie of ALL cookies is a snickerdoodle.  So I set out to make them for him.  It took a few tries, and we found his favorite!

Low Carb Snickerdoodles

A low carb cinnamon flavored cookie.  My husband loves these cookies. I have wonderful childhood memories of my mother making these. I now make these low carb versions that we love and want to share.

Ingredients

Cookie

  • 2 cups Almond Flour
  • 1/4 cup Truvia white sugar blend
  • 1/2 tsp Xanthan Gum (can use 1 egg instead)
  • 1/2 cup Butter softened
  • 1 tbsp Vanilla Extract

Topping

  • 1/8 cup Truvia
  • 1 tsp Cinnamon

Instructions

  1. Preheat oven to 300 degrees Fahrenheit.

  2. Mix all ingredients with a mixer.  (I actually use my hands with food safe gloves on as I like how it feels gooshing through my fingers as it mixes.)

  3. Evenly divide mixture to make 18 cookies.

  4. Roll each piece into balls.

  5. Mix topping of cinnamon and sugar together in a small bowl.

  6. Roll the cookie balls in the cinnamon mixture covering it evenly

  7. Flatten each dough ball with a fork making a criss-cross pattern. (The dough balls will not spread and so you have to flatten them.)

  8. Bake for 25 minutes.

  9. Let cool thoroughly.  They will be crumbly until cooled.

  10. ENJOY!

Recipe Notes

  • I made the cookies in the picture a little small and ended up with 22 cookies. 
  • These cookies brown a little better with Truvia than they do with other sugar alternatives, but not much.
  • I like Xanthan Gum better than using an egg.  That is just me.  Either works fine to keep cookie from crumbling so much without them.
  • This recipe yields cookies at 2 carbs per cookie.  Compare that to say one of the better almond cookies on the market at 14 carbs per cookie!!!!  
  • This is another win in the battle!

Lower Carb Almond Bread Pudding

This should come out to about 6 Net Carbs.

Ingredients

  • 1 loaf Keto Bread
  • 1 quart Half and Half
  • 2 tbsp Butter softened
  • 3 Eggs
  • 2 tbsp Almond Extract
  • 3/4 cup Truvia Baking Blend
  • 1 cup Almonds, sliced

Instructions

  1. Break up the slices of bread and place in a large bowl. (It's even better if they are a little stale.)

  2. In a large bowl, beat the eggs together. Add Half and Half to the eggs and mix together.

  3. Pour the egg mixture over the bread and mix it in. Cover and let stand in the refrigerator for an hour for the bread to soak up the liquid. The longer, the better. Overnight is best..

  4. Preheat oven at 325 degrees.

  5. Coat a 9×13 baking dish with butter.

  6. Stir extract and Truvia into bread mixture. (You could do this when you do the egg mixture.)

  7. fold in sliced almonds.

  8. Spread mixture into the baking dish.

  9. Bake 50 minutes or until golden brown and firm to the touch.

Recipe Notes

  • So, one serving would be  6 net carbs. (I use an automatic calculator and it should be correct, but always do your own calculations!  These things aren’t infallible.)
  • If you don’t like almond flavoring, use Vanilla.  You can even add other flavorings like coconut extract, etc.
  • You can add sugar free chocolate, coconut, other nuts, etc. to the recipe, just be mindful of the  carb count changes that creates.  
  • You can use any number of keto or light breads, just be mindful of the  carb count changes that creates.
  • We like the almond bread pudding plain, but there are any number of sauces or sugar free syrups or powdered “sugars” that you could put over top of this, if desired.

Low Carb Coconut Kiss Meringues

One of my favorite cookies growing up were these incredible meringues with coconut and pecans.  I lost the recipe for many years, but recently discovered it and converted it to remove the sugar.  It came out really well!  They were crisp and airy.  Tasted just like I remembered.  I hope you will love it too!   

(I need to make a new batch that is not so browned.  I forgot that I left them in the oven to crisp overnight.  I turned the oven on to bake a morning casserole and smelled cookies!  So, until I make a new batch… these are the pictures that I have.  Too… i purposely kinda slung the meringues down on the parchment paper to see how they would turn out instead of making neat little uniform blobs.  They are fine any way you do it. It all tastes the same!)

Coconut Kiss Meringue Cookies

Meringues with unsweetened coconut and pecans.

Ingredients

  • 3 Egg whites room temperature
  • 1/4 tsp Cream of tartar
  • 3/4 cup Swerve confectioners
  • 1 tsp Vanilla extract
  • 1 cup Unsweetened Coconut shredded
  • 1/2 cup Pecans

Instructions

  1. Preheat oven to 300 degrees.

  2. Beat together egg whites and cream of tartar until you get soft peaks.

  3. Add in the Swerve slowly and beat until stiff peaks form.

  4. Add in the vanilla and let it incorporate and then remove the mixing bowl from stand.

  5. Fold in the shredded coconut and pecans.

  6. Drop by spoonful or cookie scoop onto a baking sheet lined with parchment paper.

  7. Bake for 25 minutes or until lightly browned.

  8. Turn oven off and allow the cookies to stay in the oven for two hours to make them crunchy throughout.

  9. Allow to cool completely. Store in a tightly sealed container.

Low Carb “Man’s Cake”

I never understood why this was called “Man’s Cake”.  That is what the recipe card always said.  I never liked icing and so this was my birthday cake every year.  I was really missing it.  I had made another version of it that is on this site, but this version turned out to be the yummiest ever and so I am sharing it here with you!

Ingredients

Cake

  • 2 cups Almond Flour
  • 3/4 cup Coconut Flour
  • 3/4 cup Truvia Cane Sugar Blend
  • 1/4 teaspoon Salt
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Xanthan Gum
  • 8 ounces Cream Cheese softened
  • 2 tablespoons Sour Cream
  • 6 Eggs large
  • 3/4 cup Milk
  • 1 tablespoon Vanilla Extract
  • 1 1/2 teaspoons Almond Extract
  • 8 ounces Butter melted

Topping

Instructions

  1. Preheat oven to 350.
  2. Grease or use nonstick spray on a bundt cake pan.
  3. Melt butter and set aside.
  4. In a mixing bowl, mix flours, Truvia, salt, baking powder, baking soda and xanthan gum together and set aside.
  5. With a mixer in a separate mixing bowl, cream the cream cheese and then add sour cream and mix until smoothly blended.
  6. Add eggs slowly, one at a time until smoothly blended at each stage.
  7. Add milk and extracts and blend until smooth.
  8. Add the butter and blend until smooth.
  9. Add the dry ingredients to the mixture. Blend. It will be very thick.

  10. Pour half of the thick batter evenly into a cooking sprayed bundt cake pan.

  11. Sprinkle half of the topping mix on top of the batter in pan.

  12. Pour rest of batter on top of batter with topping.

  13. Sprinkle the rest of the topping on top of the batter.

  14. Bake for 45 minutes or until a toothpick inserted comes out clean.
  15. Let cool for 10 minutes and then turn cake out onto a cookie rack to cool completely.
  16. Cut and enjoy!

Recipe Notes

  • You can lower the glycemic index even more and a few carbs by using Erythritol. (Swerve, Sukrin, etc.)
  • You can find Xanthan Gum practically everywhere now. Walmart, Whole Foods, Earth Fare, Fresh Market and many regular grocery stores.

One of my ALL TIME FAVORITE treats when growing up was my grandmother and mother’s Swedish Brownies. On Low Carb 4 Life… I thought I would adjust it and see how it came out. Pretty good. Looks a little different, but same great taste!

Ingredients

  • 2 cups Almond Flour
  • 1 teaspoon Baking Powder
  • 1/2 cup Truvia brown sugar
  • 1/4 teaspoon Salt
  • 4 Eggs beaten
  • 1/4 cup Half & Half
  • 1 tsp Vanilla
  • 1 stick Butter melted
  • 1 cup Pecans pieces

Instructions

  1. Preheat oven at 350 degrees.
  2. Combine almond flour, baking powder, brown sugar Truvia and salt.

  3. In a separate bowl, beat eggs until frothy.

  4. Add eggs, Half & Half and vanilla and mix well.

  5. Stir in melted butter.

  6. Stir in pecans.

  7. Pour mixture into a 9×9 baking dish sprayed with non-stick spray.

  8. Bake 45 minutes and cool about 10 minutes before cutting.

Recipe Notes

  • I don’t know if these are really Swedish, but it is what my Grandmother and Mother called them all my life… so that is what I am calling them.  Most people call these “blondies”.  They will forever be Swedish to me!
  • The carbed version calls for buttercream frosting on these.  I don’t like frosting and so I never use it, but there are a lot of good low carb buttercream frostings out there.  The Swerve site, whose confectioners sugar I use has one too https://swervesweet.com/recipes/vanilla-butter-cream-frosting.
  • I like coconut non-stick spray.
