A delicious Low Carb option to the carb killing crusted Quiche!
Low Carb Crustless Quiche
A delicious breakfast egg dish that can be varied with many different ingredients.

Ingredients
Basic Ingredients
- 1 Tablespoon Butter
- 1 small Onion chopped
- 6 Eggs beaten
- 10 ounces Frozen Spinach thawed, cooked, drained and cooled
- 1 1/2 cups Cheddar Cheese sharp
- 1/4 teaspoon Salt
- 1/8 teaspoon Pepper
Optional Add-ons or Substitutes
- 12 strips Bacon cooked and crumbled
- 1/2 cup Ham chopped
- 1/2 cup Sausage crumbled, cooked and drained
- 1 cup Mushrooms chopped and sauteed in butter
- 1/2 cup Tomatoes diced and drained
- 1 cup Peppers chopped and sauteed in butter
- 1 cup Broccoli chopped, steamed and drained
- 1 cup Cauliflower chopped, steamed and drained
- 1/2 cup Artichoke Hearts drained and chopped
- 1 cup Yellow Squash chopped, steamed and drained
- 1 cup Zucchini Squash chopped, steamed and drained
- Nutmeg light sprinkle
Instructions

In a medium pan over medium heat, saute onions until translucent.

In a bowl, combine onions, eggs, spinach, 1/2 cup of cheese, salt and pepper. Pour into a 9" pie or quiche dish coated with non-stick spray.

Top mixture in dish with 1 cup of cheese.

Bake in a preheated 350 degree oven for 35-40 minutes.

Allow to cool 10 minutes and serve.
Recipe Notes
- The add-ons or substitutions are rather endless.
- Use fresh spinach! About a large bag (at least 9 ounces), steamed down, drained and cooled. I prefer baby spinach for its tenderness. (I tend to get the huge box containers of spinach for salads. When I have leftovers in the box or its just gotten to the edge of where I'll eat in a salad... I use it in sautes or quiches.)
- Change up the cheeses! Use Swiss, Gouda, Muenster, Gruyere... etc.! You can even add soft herb cheeses. I've not ventured into goat cheeses yet, but if I do, I'll let you know.
- Add herbs. I love to add chives. I've done a smoked salmon quiche before and added dill. Basil might add a new twist to some quiches. Be creative!
