Low Carb “Man’s Cake”

I never understood why this was called “Man’s Cake”.  That is what the recipe card always said.  I never liked icing and so this was my birthday cake every year.  I was really missing it.  I had made another version of it that is on this site, but this version turned out to be the yummiest ever and so I am sharing it here with you!

Ingredients

Cake

  • 2 cups Almond Flour
  • 3/4 cup Coconut Flour
  • 3/4 cup Truvia Cane Sugar Blend
  • 1/4 teaspoon Salt
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Xanthan Gum
  • 8 ounces Cream Cheese softened
  • 2 tablespoons Sour Cream
  • 6 Eggs large
  • 3/4 cup Milk
  • 1 tablespoon Vanilla Extract
  • 1 1/2 teaspoons Almond Extract
  • 8 ounces Butter melted

Topping

Instructions

  1. Preheat oven to 350.
  2. Grease or use nonstick spray on a bundt cake pan.
  3. Melt butter and set aside.
  4. In a mixing bowl, mix flours, Truvia, salt, baking powder, baking soda and xanthan gum together and set aside.
  5. With a mixer in a separate mixing bowl, cream the cream cheese and then add sour cream and mix until smoothly blended.
  6. Add eggs slowly, one at a time until smoothly blended at each stage.
  7. Add milk and extracts and blend until smooth.
  8. Add the butter and blend until smooth.
  9. Add the dry ingredients to the mixture. Blend. It will be very thick.

  10. Pour half of the thick batter evenly into a cooking sprayed bundt cake pan.

  11. Sprinkle half of the topping mix on top of the batter in pan.

  12. Pour rest of batter on top of batter with topping.

  13. Sprinkle the rest of the topping on top of the batter.

  14. Bake for 45 minutes or until a toothpick inserted comes out clean.
  15. Let cool for 10 minutes and then turn cake out onto a cookie rack to cool completely.
  16. Cut and enjoy!

Recipe Notes

  • You can lower the glycemic index even more and a few carbs by using Erythritol. (Swerve, Sukrin, etc.)
  • You can find Xanthan Gum practically everywhere now. Walmart, Whole Foods, Earth Fare, Fresh Market and many regular grocery stores.

Green Bean Casserole

My mother used to make this… a lot.  I exchanged the pork rind topping for the fried onions that usually sit atop it.  It is fairly low carb this way and thought I would share with you!

I, of course, forgot to take a picture of just how lovely this turned out, but when I make it again, I will definitely take a picture and add it in here.

Green Bean Casserole

Ingredients

Casserole

  • 4 cups Green Beans cooked
  • 1 can Cream of Mushroom Soup
  • 1/2 cup Milk
  • 1 tsp Soy Sauce
  • 1 dash Black Pepper
  • 1 Tbsp Onion dried, minced
  • 4 Strips Bacon cooked, crumbled

Topping

  • 1/2 cup Pork Rinds crushed
  • 1/8 tsp Salt
  • 1/8 tsp Onion Powder
  • 2 tsp Olive Oil

Instructions

  1. In a large, deep casserole dish, mix together cream of mushroom soup, milk, soy sauce, black pepper and dried minced onion.

  2. Add green beans and bacon and mix.

  3. In a bowl, mix crushed pork rinds, salt and onion powder. When well mixed, add in olive oil and stir until well incorporated into pork rinds.

  4. Pour topping on top of green bean mixture evenly.

  5. Bake in a 350 degree oven for 30 minutes.

Low Carb Swedish Brownies

One of my ALL TIME FAVORITE treats when growing up was my grandmother and mother’s Swedish Brownies. On Low Carb 4 Life… I thought I would adjust it and see how it came out. Pretty good. Looks a little different, but same great taste!

Ingredients

  • 2 cups Almond Flour
  • 1 teaspoon Baking Powder
  • 1/2 cup Truvia brown sugar
  • 1/4 teaspoon Salt
  • 4 Eggs beaten
  • 1/4 cup Half & Half
  • 1 tsp Vanilla
  • 1 stick Butter melted
  • 1 cup Pecans pieces

Instructions

  1. Preheat oven at 350 degrees.
  2. Combine almond flour, baking powder, brown sugar Truvia and salt.

  3. In a separate bowl, beat eggs until frothy.

  4. Add eggs, Half & Half and vanilla and mix well.

  5. Stir in melted butter.

  6. Stir in pecans.

  7. Pour mixture into a 9×9 baking dish sprayed with non-stick spray.

  8. Bake 45 minutes and cool about 10 minutes before cutting.

Recipe Notes

  • I don’t know if these are really Swedish, but it is what my Grandmother and Mother called them all my life… so that is what I am calling them.  Most people call these “blondies”.  They will forever be Swedish to me!
  • The carbed version calls for buttercream frosting on these.  I don’t like frosting and so I never use it, but there are a lot of good low carb buttercream frostings out there.  The Swerve site, whose confectioners sugar I use has one too https://swervesweet.com/recipes/vanilla-butter-cream-frosting.
  • I like coconut non-stick spray.

The Amazing Chaffle

So I have ventured into the wonderful world of “Chaffles”!  If you haven’t yet… get on the train!

It was when my sisters and I had gathered with our families for Christmas, that my oldest sister told us of her new favorite low carb food: the Chaffle. My other sister and I hadn’t heard of it.  It is cheese and usually almond flour that makes a bread-like waffle for sandwiches, snacks or just as a waffle itself.  You can make as many kinds of versions as you can think of.  Savory or sweet. Cream cheese, mozzarella or cheddar are often used.  Sometimes parmesan and others are used more for flavor.

There are even Chaffle makers.  There is one by the company Dash at Bed Bath & Beyond and other retailers or Amazon.  It makes a sandwich bun-sized Chaffle waffle.  Most recipes are made so that you have two Chaffles. You pour half the batter from the recipe cook one and then cook the other.  I discovered my Chaffle maker plates didn’t come out for easy cleaning, and so I switched back to my regular waffle maker which does have that feature. (Maybe they make higher end Chaffle makers that do have removable plates.)  For my waffle maker, I have found that you have to double the recipes for the much larger surface area.

The recipes are endless.  My sister gave me a cheat sheet for recipes.  I am posting here, and she is not sure where it came from and so I am not sure who to credit. 

My favorite savory is the “Cheddar by the Bay”.  I was worried there was bay seasoning, which I don’t like.  There is not.  Here is the recipe:

Cheddar by the Bay Chaffle

1                    Egg

½ cup            Cheddar cheese, shredded

2 Tbsp.         Almond flour

1 tsp.            Garlic salt

½ tsp.            Baking powder

This Chaffle makes me not miss Red Lobster’s biscuits!  I make them for “bread” for dinner. 

The attached recipe cheat sheet is a great place to start if you are new to this or even an already seasoned Chaffler!  (I apologize for some of the writing to the right getting cut off.  It came to me that way.  I’ll try to re-type these later, but wanted to share with you now.)  There is a flavor for any mood or occasion!

Cheesy Broccoli Chicken Casserole

I took leftovers from my Basic Chicken Salad recipe and created this delicious casserole.  I hope you enjoy it!

Cheesy Broccoli Chicken Casserole

A delicious casserole using a chicken salad base

Ingredients

  • 2.5 cups Chicken Salad See recipe
  • 4 cups Broccoli pieces or crowns
  • 1 can Mushroom Soup
  • .5 cup Mayonnaise
  • 2 cups Cheese grated
  • 1/4 tsp Salt
  • 1 tsp Lemon Juice

Instructions

  1. Preheat oven to 350 degrees.

  2. Steam the broccoli until broccoli almost fork tender and drain.

  3. Mix broccoli, soup, mayonnaise, salt, lemon juice and 1/2 cup of cheese into the chicken salad base.

  4. Put mixture into a casserole dish sprayed with non-stick oil.

  5. Top with the remaining cheese.

  6. Bake for 40 minutes until cheese bubbly and starts to brown.

Recipe Notes

  • I like to use sharp cheddar cheese.
  • Basically, the seasoning added here is to season the broccoli that was added.
  • I like to add sliced almonds into the recipe.
  • I love how lemon juice "brightens" dishes.
  • You can serve this over riced cauliflower.
