I love potatoes, as I’ve previously stated on here before. Every kind. Fries. Tots. Hash browns. Potato cakes. You name it. However, I don’t miss any of them as much as I miss a good ole loaded baked potato to go with my steaks, chicken or barbeque! My husband and I were missing it a lot until I did this recipe.

Loaded Cauliflower Casserole
A great low carb alternative to those loaded baked potato cravings.
Ingredients
- 1 head Cauliflower
- 1 tbsp Olive Oil
- Salt
- Black Pepper
- 3/4 cup Sour Cream
- 1/4 cup Heavy Cream
- 2 tsp Garlic minced
- 2 cups Cheddar Cheese shredded
- 6 strips Bacon cooked and crumbled
- 1/4 cup Green Onion chopped
Instructions

Preheat oven to 425°.

Break cauliflower into florets into a bowl.

Drizzle olive oil over florets and mix to coat with oil.

Salt and pepper florets to taste.

Turn cauliflower onto a baking sheet.

Bake cauliflower florets for 25 minutes until fork tender.

Remove cauliflower from oven.

Lower oven to 350°.

Stir together sour cream and heavy cream until well blended.

Stir in garlic, 3/4 cup of the cheese, bacon pieces and onions.

Stir cauliflower into mixture and then put cauliflower mix into a casserole dish.

Top cauliflower with remaining 1 1/4 cup of cheese.

Bake 25 minutes or until cheese melted or bubbly on top.
Recipe Notes
- I prefer sharp cheddar cheese.
- You can use lower fat cheese or sour cream to lower calories and fat. It isn’t quite the same, but you know your dietary needs best.
- I could pretty much eat this whole casserole myself.
- You can do a lot of what you do with back potatoes with this i.e. add steamed broccoli or barbecued meat, etc.
