Lower Carb Snickerdoodles

I was so excited when I made almond cookies that satisfied my tastebuds.  I had been missing those in my low carb lifestyle!  Then, my husband mentioned his favorite cookie of ALL cookies is a snickerdoodle.  So I set out to make them for him.  It took a few tries, and we found his favorite!

Low Carb Snickerdoodles

A low carb cinnamon flavored cookie.  My husband loves these cookies. I have wonderful childhood memories of my mother making these. I now make these low carb versions that we love and want to share.

Ingredients

Cookie

  • 2 cups Almond Flour
  • 1/4 cup Truvia white sugar blend
  • 1/2 tsp Xanthan Gum (can use 1 egg instead)
  • 1/2 cup Butter softened
  • 1 tbsp Vanilla Extract

Topping

  • 1/8 cup Truvia
  • 1 tsp Cinnamon

Instructions

  1. Preheat oven to 300 degrees Fahrenheit.

  2. Mix all ingredients with a mixer.  (I actually use my hands with food safe gloves on as I like how it feels gooshing through my fingers as it mixes.)

  3. Evenly divide mixture to make 18 cookies.

  4. Roll each piece into balls.

  5. Mix topping of cinnamon and sugar together in a small bowl.

  6. Roll the cookie balls in the cinnamon mixture covering it evenly

  7. Flatten each dough ball with a fork making a criss-cross pattern. (The dough balls will not spread and so you have to flatten them.)

  8. Bake for 25 minutes.

  9. Let cool thoroughly.  They will be crumbly until cooled.

  10. ENJOY!

Recipe Notes

  • I made the cookies in the picture a little small and ended up with 22 cookies.
  • These cookies brown a little better with Truvia than they do with other sugar alternatives, but not much.
  • I like Xanthan Gum better than using an egg.  That is just me.  Either works fine to keep cookie from crumbling so much without them.
  • This recipe yields cookies at 2 carbs per cookie.  Compare that to say one of the better almond cookies on the market at 14 carbs per cookie!!!!
  • This is another win in the battle!

Lower Carb Almond Bread Pudding

Lower Carb Almond Bread Pudding

This should come out to about 6 Net Carbs.

Course Dessert
Cuisine French
Prep Time 1 hour 50 minutes
Cook Time 50 minutes
Total Time 2 hours 40 minutes
Servings 12
Calories 240 kcal

Ingredients

  • 1 loaf Keto Bread
  • 1 quart Half and Half
  • 2 tbsp Butter softened
  • 3 Eggs
  • 2 tbsp Almond Extract
  • 3/4 cup Truvia Baking Blend
  • 1 cup Almonds, sliced

Instructions

  1. Break up the slices of bread and place in a large bowl. (It's even better if they are a little stale.)

  2. In a large bowl, beat the eggs together. Add Half and Half to the eggs and mix together.

  3. Pour the egg mixture over the bread and mix it in. Cover and let stand in the refrigerator for an hour for the bread to soak up the liquid. The longer, the better. Overnight is best..

  4. Preheat oven at 325 degrees.

  5. Coat a 9×13 baking dish with butter.

  6. Stir extract and Truvia into bread mixture. (You could do this when you do the egg mixture.)

  7. fold in sliced almonds.

  8. Spread mixture into the baking dish.

  9. Bake 50 minutes or until golden brown and firm to the touch.

Recipe Notes

  • So, one serving would be  6 net carbs. (I use an automatic calculator and it should be correct, but always do your own calculations!  These things aren’t infallible.)
  • If you don’t like almond flavoring, use Vanilla.  You can even add other flavorings like coconut extract, etc.
  • You can add sugar free chocolate, coconut, other nuts, etc. to the recipe, just be mindful of the  carb count changes that creates.
  • You can use any number of keto or light breads, just be mindful of the  carb count changes that creates.
  • We like the almond bread pudding plain, but there are any number of sauces or sugar free syrups or powdered “sugars” that you could put over top of this, if desired.

Low Carb Chicken Tetrazzini

One of my favorite comfort foods was turkey tetrazzini.  Whether Mom made it or Stouffers made it, I loved it.  Being low carb means being without flour pastas.  I’ve not had tetrazzini for years until I realized that I could easily make it. There is a whole world opened up in using noodle alternatives like hearts of palm noodles, that are in this dish and my beef stroganoff.

Give this tetrazzini a try!

Low Carb Chicken Tetrazzini

A comfort food of noodles, chicken, celery and mushrooms in a rich sherry mushroom sauce.

Prep Time 20 minutes

Calories 298 kcal

Ingredients

  • 1 can Palmini
  • 1 1/2 cups Chicken Breast rotisserie
  • 1 can Cream of Mushroom Soup
  • 1/4 cup Mayonnaise
  • 1/4 cup Parmesan Cheese grated
  • 1/2 cup celery diced
  • 1/2 cup Mushrooms canned or fresh sauteed.
  • 1 Tbsp Butter
  • 1/4 tsp Ground Pepper
  • Salt to taste
  • 1 Tbsp Sherry sweet
  • 1/2 cup Pork Rinds crushed

Instructions

  1. Preheat the oven to 350 degrees.

  2. Open, drain and rinse the can of Palmini linguine noodles. You can use as is or cover in milk for 10 minutes and drain and rinse to remove acidity from packing liquid. Place noodles in the bottom of a 2-quart casserole dish.

  3. Saute 1 Tbsp of butter, celery and mushrooms until soft.

  4. Add soup, mayonnaise, parmesan cheese, celery/mushroom mixture, salt, pepper and sherry to noodles and mix.

  5. Top with crushed pork rinds.

  6. Bake 45 minutes.

  7. Let cool a few minutes and serve.

Recipe Notes

  • I've used both chicken and turkey in this recipe.  I liked pulled chicken breast the best, to be honest.
  • I'm lazy.  I could make a sauce, but I'm into convenience and cream of mushroom soup and cream of chicken soups are never leaving my pantry.
  • If you use buttered Panko crumbs on top instead of pork rind crumbs, you will add about 4 more carbs per serving.  (1 Tbsp melted butter mixed with 1/2 cup Panko.)
  • If you don't use pork rind crumbs at all, the carbs per serving stays the same.
  • To me, it is the sherry that makes it!  Kind of like how sherry makes crab bisque so scrumptious.  It just takes it to another level of flavor.  However, if you don't have sherry, this recipe is delicious without it.

Low Carb Coconut Kiss Meringues

One of my favorite cookies growing up were these incredible meringues with coconut and pecans.  I lost the recipe for many years, but recently discovered it and converted it to remove the sugar.  It came out really well!  They were crisp and airy.  Tasted just like I remembered.  I hope you will love it too!

(I need to make a new batch that is not so browned.  I forgot that I left them in the oven to crisp overnight.  I turned the oven on to bake a morning casserole and smelled cookies!  So, until I make a new batch… these are the pictures that I have.  Too… i purposely kinda slung the meringues down on the parchment paper to see how they would turn out instead of making neat little uniform blobs.  They are fine any way you do it. It all tastes the same!)

  2. Allow to cool slightly and serve!

Recipe Notes

  • Sometimes I add 5 cups of chicken.
  • Sometimes I add a little more chicken stock.  It really depends on the level of moistness you like.  Everyone has an opinion.  Drier. Wetter.  Experiment and you will find what you like, and at least I gave you a base here to find yours.
  • This recipe is main dish. As a side dish, the servings are 16 for a total carb count of 8 (Net Carbs are 6).  As a main dish, the servings are for 8 for a total carb count of 17 (Net Carbs are 13).
  • Compare the carbs to using corn meal for the cornbread.  That would calculate out to 40 total carbs (35 Net Carbs) per serving!!  Wow.  And most people can't tell that cornbread using corn meal wasn't used!
